Recipe: Pan Seared Tuna Steaks with Soba Noodles

Just for you, Judie!  (and anyone else who cares to give it a whirl)

Tuna Steaks (noodles will be enough for 4)

About 1/4 cup of fresh ginger, peeled and diced

1 head garlic, peeled and minced

1 bunch green onions

about 3-4 cups of fresh broccoli florets, blanched

1 large mango, peeled and diced

For the sauce:

4 Tablespoons dark soy sauce

2 Tablespoons dry sherry or dry marsala wine

1 1/2 cups water

1 Tablespoon cornstarch

2 small bundles of soba noodles, cooked as directed on package

Salt and pepper tuna steaks on both sides, and cook in a very hot skillet (I love cast iron), about 2 minutes on each side.  Also sear edges if needed.  Put steaks on plate and keep warm in oven.

Sauté scallions, garlic and ginger in hot oil (I use canola) until ginger is tender.  Add broccoli, and toss until just heated through.  Pour in sauce, and stir until bubbly, and sauce thickens slightly.  Toss in soba noodles and diced mango.  To serve, pour some of sauce over tuna steak, and plate with noodles on the side.
